With all that's going on, I've been trying to stay motivated and as active as I can be within the walls of my home. If you are experiencing some anxiety, I understand, I’ve been there. Which is why, instead of talking more about it and adding to your information overload, I’ve put together some low-effort fun ideas that we can try together to help get you out of the funk and stay more positive now. This bi-daily series; 5 Fun Things To Do At Home This Weekend, will feature some of my favourite activities and I hope it helps change up your routine a little bit.
Fun Things To Do At Home This Weekend
One: Try a new recipe
With being home a lot more, I find myself cooking more and trying out different recipes. This weekend, my roommate and I tried a one-pan fusilli pasta recipe and it was lovely! A perfect creamy, filing pasta to go with our glass of wine.
Ingredients:
- 12 ounces diced Italian sausage
- 1/2 cup of shrimp (optional)
- 4 ounces shredded bacon
- Half of pack of Fusilli
- 1 red bell pepper
- 2 tablespoons of olive oil
- 1 clove of garlic - minced
- 1/2 cup of red wine
- 1 medium white onion
- 1 cup of crushed tomatoes
- 1 teaspoon of dried oregano
- 3 scotch bonnet peppers (use less if you can't handle spicy)
- 1 cup of low sodium chicken broth
- 4 ounces of cream cheese
- Fresh parsley to garnish
Instructions:
- Heat 2 tablespoons of olive oil in a deep pot, over medium heat. When the oil is heated, add Italian sausage, shredded bacon, scotch bonnet white onion, diced bell peppers and cook for 5 minutes or till the sausages are cooked through and the onions are clear. Add diced garlic and cook for one minutes
- Add in shrimp, crushed tomatoes, 1/2 cup of red wine, 1 cup of chicken broth and 1 teaspoon of oregano. Cover and allow to boil for 5 minutes on high heat.
- Steam pasta for 5 minutes while your sauce boils.
- Add in your Fusilli (or Rigatoni ) pasta and mix in to combine pasta and sauce. Cook for 10 minutes on medium heat while stirring frequently till pasta is well cooked.
- Reduce heat to low, add 4 ounces of cream cheese, stir in and let simmer till cream cheese melts and mix in. Turn off heat and serve!
- Garnish with parsley and enjoy!
I enjoyed making some pasta with some of my favourite meats and seafood ( as you know from Instagram, I love my shrimps and crabs). This easy to make pasta went really well with my glass of red and it was a nice switch up from my regular meals of the week.
